About the Author Helen Zoe Veit is Associate Professor of History at Michigan State University. She specializes in American history in the nineteenth and twentieth centuries, focusing on the history of food and nutrition. She is the author of Modern Food, Moral Food: Self-Control, Science, and the Rise of Modern American Eating in the Early Twentieth Century.

2 of 2 people found the following review helpful. Interesting perspective By HSJ This is a very interesting book that I had originally heard about from the American Experience Facebook feed. It takes a well trodden point of history and examines it from a new perspective. There are some editing issues involving repetition and redundancy but overall a worthwhile purchase for anyone with an interest in the social history of the Civil War and/or cooking.
